The many classic local dishes, produced in the traditional way using natural flavors, lets you feel the gentle hearts of the people who made it.
Passion is poured into each and every ingredient, and when we receive these "lives", it is these people who deliver those "lives" to you.
We hope that you will feel appreciation for each of them while you enjoy the wonderful flavors.
Ducks used in integrated rice duck farming are fed with wheat and grains. The hot pot uses a duck stock base, so whatever vegetables are used, the soup is rich and exceptional. You can also enjoy it over a hand-made bowl of buckwheat noodles.
There are 36 recognized local breeds of chicken in Japan, of which Aizu chicken is one. It is used as one of the ornaments in the Aizu Higanjishi (“Three Lion Dance”), and has been raised for practical purposes since long ago. The “crystal-plate steak” is a method of cooking unique to Ashina, and uses a simple seasoning of just salt and pepper.
The magic of grilling lean steaks of scarce Aizu beef elevates it to an unforgettable flavor. Can be seasoned with wasabi, soy sauce, mushroom salt or mountain salt. Conversations also become lively around the hearth.
The farmer says that, because the cows are reared in an environment of clear air and fed straw left to mature for a year to raise its lactobacillus content, the meat is very healthy. Experience the sweetness of the freshly cooked meat with subtle mountain salt or our unique mushroom salt. Alternatively, mix in a soft cooked egg to enjoy a deep, rich flavor.
Whitefish, pheasant, sea bream, tailed duck, small duck, ducklings, deer, wolf, bear, and a visceral viscera, these are about seven items. You can enjoy the seasoning with the taste of Aizuyama salmon, wasabi soy sauce, home-made komari salt and olive oil.
